Abstract

Milk is a rich source of nutrition. After water carbohydrate is main constituent of
milk. It is primary source for infant nutrition. It protects them from various diseases like
tuberculosis, microbial infections etc. It acts as anti-inflammatory, anti-coagulant, anti-cancer etc.
Remember these things Gaddi Sheep’s milk is collected from high altitude region and isolate
oligosaccharides by Kobata and Ginsberg method. Isolated oligosaccharide named as Oviasose, it
is a decasaccharide. Structure of Oviasose are confirmed by HPLC and chemical degradation
which further supported by NMR (1H, 13C, HSQC, HMBC, COSY, TOCSY etc.) and Mass Spectroscopy
